I’d love to make fish more interesting - I don’t want to opt for the deep fried versions but also often a mission to think up a whole meal around the fish too. I generally opt for a bit of mash or potatoes of sort, some fresh green beans and some roasted cherry tomatoes as accompaniments. ANy other ideas? Also have tried basic seasoning but anyone know what herbs go best with different types of fish, and what other recipes include fish that can be served as a whole meal?

One favourite way of doing sea bass (good with monkfish too) -- saute some onions, coat it in a bit of flour, heat olive oil or butter in a roasting pan, then put the fish in the pan together with some mushrooms of any kind and a glass or so of white wine. In about 15 minutes you have a delicious bt of dinner, all it needs is a salad and a little bread.
