one whole chicken-skinned but with bones
heat some oil in a pot,as soon as the oil is hot put some cumin seeds, green cardamon pods, couple of sticks of cloves and cinnamon and some bay leaves.As soon as the jeera seeds pop, put in 2 large red onion finely chopped and also add a knob of butter.Let the onions cook until they are golden brown and now add some finely chopped ginger(2 tablespoons),garlic(8-10 cloves) and 3 to 5 green chillies finely chopped- stir the mixture until all the aromatics and spices are cooked.Now add a tablespoon of jeera (cumin)powder and a teaspoon of good garam masala powder and a teaspoon of salt(add more in the end if required- add some water if the mixture is dry-The colour should be dark golden brown.Now add a tin of chopped red tomatoes(and a cup of water) and stir the mixture until blended.Also add some fresh very finely chopped coriander and salt to taste.Cook this sauce for 15 mins on slow heat(patience is the name of the game).Now add in the chicken pieces one by one in the sauce and cook on the slowest heat possible for one hour (do not stir).The gravy should be golden brown and chicken should be cooked if not then cook for another 10 mins.slow cooking will ensure that the flavours go into the meat and will make it succulent-to finish off add lots of freshly chopped coriander, another knob of butter and squeeze some lime juice.Serve with a hot chappaties/nan/rice and a tomato and onion salad

I used star anise instead of bay leaves and added some coconut milk instead of just plain water. Oh, and I added also turmeric powder with the garam masala. You should explain that jeera is just another name for cumin, and that the best oil to use is groundnut oil.

ummmm dats an interesting twist (cocunut)and i will try it(did the colour turn creamy)- i have added cumin next to jeera poder-thanks for that
star anise can be very potent. Coconut milk is great, or milk or cream, even sour cream
