Hello Sarah!
There are so many things to see! You should definitely go to the Castle of Saint George!it is a great place to see a panoramic view of the city and also enjoy a historic place! Take a coffe at the Cafe POrtas do Sol, which has an amazing view over the river Tagus and the southern shore.
If you have time go to Belém, to see the Church of the Hieronymus Monastery (i woldn't go to the cloisters as you have limited time) and taste the Pasteis de Belém (Antiga Confeitaria de Belém); they are to die for! Also I would take a boat Tour on the river; it takes an hour and is very relaxing and so you can do sightseeing a relaxing way!
